Made from certified organic and biodynamic Cabernet and Sangiovese, the wine undergoes a secondary fermentation on skins from a previously fermented batch, adding depth, texture and complexity. This is a hands-on, minimal-intervention wine. Dry farmed, hand-picked, foot-crushed and wild fermented, it reflects a natural approach where character comes from vineyard and process rather than heavy manipulation. The ripasso technique adds richness and structure without making the wine heavy. It builds a layered, savoury profile, where dark fruit, spice and earthy notes sit alongside a lively, energetic edge.
